On a chilly overcast Sunday, sitting with a nice cup of herbal tea and a warm blanket was in order… which inspired me to bake up a batch of golden gluten free berry friends 🙂
Friands are actually super easy to make… Have I mentioned my great liking for recipes where you just toss everything in a bowl and hand mix before baking? Well this is another one!
Here are a few tips to help you out…
- When measuring out the dry ingredients, be sure to sift the icing sugar.
- There’s no need to over whisk the egg whites – merely break them up with a fork or small whisk is all that’s needed.
- If adding frozen berries, be sure to add them at the very end once all the mixture is combined and then immediately spoon the mixture into a friand pan and pop it in the oven before the berries defrost. And whether fresh or frozen, fold them in with a delicate hand 🙂
- For this batch, I used Bobs Red Mill 1 to 1 Flour mix and Almond Meal and Oob organic frozen mixed berries. As always, where possible, aim for organic, additive free ingredients to avoid unnecessary health or behaviour issues.
